Greek Salad

Bag of Fresh Express iceberg garden salad (w/romaine & carrots)
kalamata olives
tomatoes, diced (or cherry tomatoes halved)
cucumbers, peeled, cut in hlf lengthwise and sliced
capers
roasted red peppers sliced and drained
fresh green pepper seeded and cut in strips
green onions sliced
feta cheese crumbled

Dressing:
2 tsps wine vinegar
1/3 c olive oil
1 tsp Greek seasoning & 1/2 tsp oregano
OR
1/4 tsp salt, 1/4 tsp garlic powder, 1/8 tsp pepper, & 1/2 tsp oregano

Combine all dressing ingredients and shake well. Adjust seasonings to taste.
Combine all salad ingredients in a large bowl. Pour prepared dressing over and toss. Serve immediately. You can make the salad ahead of time, but put on the dressing when you are ready to serve.
Adjust proportions according to your preference and the number of servings needed.
